When I started my Trim Healthy Mama journey there were some recipes I just would not let go of. One of those was Cheeseburger soup. The yummy comfort food is such a tasty treat to my taste buds. I was on a mission to make it THM friendly and the result, in my opinion, is even better than the original!
This last week I have made it
twice three times and I always have to double it because it gets gobbled up by the entire family. The first time I made it they did not even know I had switched out the potatoes for cauliflower, except one child who saw me cooking the cauliflower and he turned his nose up at it, although, that was short lived.
It has become even better with my new Instant Pot! The flavor is so savory! It is making my mouth water just thinking about it. We might be making it three times this week. 🙂
I have included directions for a pressure cooker.
1/2 lb. browned hamburger
3/4 cup chopped onion
3/4 cup shredded carrots
3/4 cup chopped celery
1 t. basil
1 t. parsley
4T. butter or half butter/half red palm oil
3 cups chicken broth
4 cups chopped cauliflower (raw or frozen)
2 triangles of Laughing Cow swiss
2 cups shredded cheddar or colby jack
3/4 c. half and half
3/4 c. heavy cream
3/4 t. salt
1/4 t. pepper
1/4 cup sour cream
2 T. Nutritional Yeast
1/4 t. glucomannan (optional)
Conventional Stove directions: In 3 qt. pot brown burger and set aside. In the same pan, saute onions, carrots, celery, basil and parsley in butter. Add broth, cauliflower, and burger and bring to a boil. Reduce heat, cover, and simmer for 10 minutes. Sprinkle glucomannan. Reduce heat to low. Add cheeses, cream/half and half, nutritional yeast and sour cream. Stir to melt cheese.
Pressure Cooker: Saute onions, carrots, celery, basil, and parsley in butter. Add browned burger, broth, and cauliflower. Reset pressure cooker on the manual for 8 minutes if using raw cauliflower or 6 minutes if using frozen cauliflower. Do a quick release when timer is up. Sprinkle with glucomannan. Add cheeses, cream, nutritional yeast, and sour cream. Stir until cheese is melted.
