I don’t know about you but this time of the year my eating habits pretty much go out the door. I feel like I am in a sugar coma from Thanksgiving through Christmas. Anyone else out there with me?
I normally follow the THM eating plan but during the Christmas season I love all the goodies. I k
now there are a lot of recipes out there to help stay on plan during the holidays, but the truth is….I do not want to. I want my traditional yummy, sugar laden, Christmas treats.
Don’t get me wrong, I certainly pay the penalty.
One of the traditional treats in the O’Brien household is caramel corn. We kick off caramel corn season with my husband’s birthday in October and it runs through Christmas.
There is nothing like the smell of fresh caramel corn baking in the oven and later digging in to the melt in your mouth snack.
I think I need to make a batch!
- 1 cup butter
- 2 cups brown sugar
- ½ cup corn syrup
- dash of salt
- pinch of cream of tarter
- (added later ½ teaspoon baking soda)
- 1½ c unpopped popcorn
- Pop popcorn in an air popper. Remove all the unpopped kernals.
- Heat first five ingredients for 5 minutes.
- Bring to a boil.
- Add ½ teaspoon baking soda.
- Bake at 200 for 1 hour
